I am not sure what they actually do. My tank is just over 5 weeks, so I do not really have excess nutrients. I have 5 fish and 2 hermits.
I believe they eat micro algae - whatever that is. I have fine 3to4 mm green hairy algea, which is normal for a tank just after cycling.
You can go for a serpent star. They look nice and eat detritus, so they will clean all the uneaten food and fish poop for you. They wont help with the hair algae which seem to be from phosphates from your make up water or that were trapped in the rock to start with.
