Idol Marine used to sell probe holders, so perhaps check with them.
Alternatively, they are easy to make from plexiglass/perspex. Just get a 10mm or so piece of perspex, cut to size and drill for probes. You can do it as a clip on or magnetic fixture depending on your preferences. (see pic below)
You can find plastic grub screws at most DIY or hardware outlets.
