Do you setup the Dymax pH Meter in the sump with a probe, or how does it work?

The probe for the meter goes in your sump and then the meter shows you the pH all the time. The meter can be placed away from the probe, it is not like the pH pen.

Lets see what Chikaboo decides. The problem with only keeping one male and one female is that the female will die in a month or two. The males are really aggresive and if you don't have lots of females to share the aggresion they die.
