I'll be installing a chiller in the near future and would like to know how quickly I can drop the temp without stressing my system too much.
Currently running a toasty 31-28 degrees.

Well I would set the chiller to 28C, then dropping it down 1C every 2 or 3 days.

IMO measure the temp of your tank at 05h00 in the morning and set the temp at that. Obviously not less than 25c if the temp drops that far. Then reduce as lIghty says.
