I woke up this morning and one of my fish was dead and saw one of my heaters stopped working for some unknown reason[temp was 20 degrees this morning). I had two heaters in sump luckily but are they so sensitive to temperature variations or could it be something else?

Will replace the one heater this afternoon.
And should I upgrade both heaters to bigger ones? [I had 150w and 300w for what I suspect is a 650-700 litre system].

I had a similar problem not to long ago but luckily lost no livestock. 1 of my heaters also decided it does not want to heat anymore. Temp dropped down to 20 as well. I can't comment on how sensitive the fish are to that change but I would think that if the temp dropped too fast it would have an impact on them. I have learnt to check my temp every morning and evening after the failure.

I also have around 750l total volume and read that I need a minimum of 1x 300w heater. I had 2x 200w heaters. So replaced both with new 300w heaters. My temp stays a lot more stable now as well.

theres a difference between a chineese 300w heater and a 300w Eheim. I used to use the cheap chineese heaters and 3 heaters couldnt do what 1 Eheim does. IMO if you can afford Eheim go for them. You will never have to replace a heater again

100% agree. I replaced mine with 2 300w Eheim heater. A bit pricey but well worth it.

I also thought so, but think I have 3 or 4 Eheim heaters in cupboard that stopped working. So now I just buy cheaper heaters and make sure there is redundancy. At current new prices you can buy 5 cheap heaters for the price of 1 Eheim. I do however run 2 Eheim's in current tank, the only two that are left working out of quite a few.

Also the cheap digital thermometers I use have an alarm function if temp drops below set level.
