What is the chance of my Copperband not eating aiptasia? I've had the fish for about a week now and its almost eaten all the featherdusters in the tank, but not yet touched the Aiptasia.

 It's one of those 50/50 fish, some never touch it yet others devour it with a passion, but generally they are accepted as being aiptasia eaters, perhaps he will move on to the aiptasia once he's decimated all the featherdusters.

Nothing wrong with that, aiptasia are excellent as a means of filtration, some guys in the USA cultivate aiptasia scrubbers due to their excellent water filtration capabilities.
